BBQ Chicken Pizza Recipe

“I don’t like pizza.”….said no one ever.
I’ve never, ever been a picky pizza eater. I’ll eat the thick crust, thin crust, cauliflower crust, any topping….you name it, I’ll try it.
My favourite growing up was the Meatlover’s at Pizza Hut….not a problem with a youthful metabolism. Nowadays…we have a problem.

The cool thing bout pizza is the thousands of ways to be creative and have variety, which is so, so important! Boredom sometimes rules out better choices, so if you have a food that’s considered an indulgence and make it nutritious & still tastes great, it’s a win for everyone!
Pizza is one of those foods that is so easy to make, but it is way too convenient to just pick up the phone and have it delivered.
One of my all-time best-loved pellet pizza oven recipes is for a delicious BBQ chicken pizza. This recipe is not only easy, but it’s also healthy and packed with flavor. And the best part? It’s made in just minutes in your pellet pizza oven!
BBQ Chicken pizza is my most treasured “slimmed down” pizza…The key to a great pizza is using a good quality BBQ sauce. We love Sweet Baby Ray’s Sweet n’ Spicy.
You could also make your own, to control calorie and sugar content….some BBQ sauces get pretty rich.

I usually keep it pretty simple, just sauce, cheese & chicken. But please don’t think you have to stop there….There is no wrong way to make this…feel free to let your creative motor hum!!
Ingredients:
- 1 pizza crust (I use Boboli, but you could make your own or try Cauliflower crust)
- 2 chicken breast, all skin removed, cut into small chunks
- 2 Tbsp minced garlic
- 1/2c- 3/4c BBQ Sauce
- 1 pkg Kraft mozzarella/parmesan shredded cheese mix
- salt & pepper to taste
Optional Ingredients:
- red onion, sliced thinly
- jalapenos, sliced
- green bell peppers, sliced
- banana peppers, sliced
- bacon pieces
- olives
- pineapple chunks (yes!!!!)
Instructions:
Preheat the oven to 400 degrees; if making your crust, follow your directions for prep.
Cut raw, trimmed chicken into pieces and brown in a skillet using the minced garlic and 1 Tbsp olive oil.
Set aside once cooked through and drain. coat the pizza crust with a thin layer of BBQ sauce.

Place 1/2 of the cheese, then the chicken, and then the rest of the cheese and any other add on’s you would like to have. Bake for 10-12 minutes placed directly on the oven rack.
When the timer goes off, take it out of the oven and cut it into 8ths. Serves 2-3 people.
Now it’s time to prepare to have your taste buds tickled with delight!
And there you have it…the food that can make even the pickiest eaters step in and take a bite while keeping control of calories, fat, and all the other downers that come with takeout pies!
Get creative with veggie toppings! I like a “pretty” plate, with lots of color and texture. The more colours, greens, oranges, yellows, etc., you have on the plate, the healthier it typically is.
All those colorful foods represent specific vitamin groups, so it’s a win-win!
Try this pizza with pineapple….I only add that on if I’m making it for myself, but it is excellent!
