Browsing through Pinterest for the perfect featured image for this post, I was delightedly surprised to discover a lot of species of Donuts.
I bumped into the Chocolate ones, the Strawberry ones, the Vegan ones, the ones with jam or with sugar and more.
It made me realize just how dull our food culture here in Nigeria sometimes is. We need to spice things up and experiment more (I’m always running one form of food experiment or the other in my own Kitchen 🤭).

Ingredients for making Nigerian Donuts recipe
Here’s all the ingredients you need to get started on this exciting adventure:
- 2 Eggs
- 1/2 cup of sugar
- 3/4 cup of milk
- 1 Teaspoon of Nutmeg (optional)
- 1.5 Table spoon of Yeast
- 3 Cups of flour
- 4 Table spoons of melted Butter
- A Pinch of Salt (only necessary if you’re using unsalted butter).
- Groundnut or Vegetable oil (enough to allow deep frying. This isn’t the time to economize your oil).
- Strawberry Jam (also optional but who wouldn’t want some strawberry Jam on their Doughnut? 🙄)

Directions for how to make Nigerian Donut
So whether your goal is to make Donuts commercially, perhaps you need a recipe to prepare up to 30 pieces of soft, light and fluffy Doughnuts.
Whether you just want something you can make and eat at home with the family, my simple Donut recipe will suffice.
Just follow the step by step procedures outlined below:

Now let’s get right to the good stuff:
Step 1: Use a sieve to sift 2 cups of flour (out of the 3 cups) in a large bowl. Reserve the last cup for now. We’ll be using that later on.
Step 2: Mix the Yeast, Sugar, Nutmeg with the 2 Cups of sifted flour.
Step 3: Next, create a hole in the middle of that mixture into which you will now pour the Milk, melted butter and your eggs. Mix thoroughly until the entire mixture turns into a wet big dough.
Step 4: Remember that last cup of flour we reserved earlier? Good. Now sprinkle a little bit at a time of that flour into the dough as you continue to knead it with your hands.
Step 5: Pick up that large dough and move it to a chopping board or a suitable surface right there in your Kitchen that has been sprinkled with some flour.
Use those gentle hands of yours to knead the dough (don’t add too much flour to it) for the next 5 mins.
What you’ll achieve once you’re done with this is your dough will no longer be sticky but it’d be soft and moist.
Step 6: Next, transfer your dough again into a clean bowl that you’ve greased with oil or butter. Also grease the surface of the dough to prevent it from drying out and forming crusts.
Yes, you would be able to simply knead the crusts back into the dough but who wants that extra stress?
Leave it for about 1 hr in this state and you’ll see that the dough will practically swell and triple in size.
Step 7: Now during the rising of the dough, air would most likely have become trapped in it. So it’s time to bring your Karate chops to the Kitchen 😁.
Relax, it’s nothing serious. Just punch down the dough a few times to remove the trapped air, then transfer it again to your work surface (yeah, I know. Lots of transferring happening to this dough 😌).
Step 8: Once on your work surface, use a rolling pin to roll out the dough. Cut it into a smaller pieces then cut out the holes in the middle. You’d want to cover and leave this for about 10 to 20 mins to let it swell again and increase in size (no one likes a flat doughnut 😋).
Step 9: Preheat your oil to approximately 375 degrees Fahrenheit and fry. Remember, your oil must be enough in quantity to be able to deep fry your donuts.
Fry until they turn golden brown and occasionally flip to either side to make sure 360 degrees around the donut is fried.
Step 10: Once it is golden brown enough, take them out and leave to drain excess oil on a paper towel. Serve with your Strawberry Jam in the middle. You can even roll it in some granulated sugar (I’m sure your kids will love that!).

- If you want to get the best possible doughnut, when kneading, please make sure you don’t put too much flour.
- When using yeast to make your donuts, endeavour that the yeast is active. To proof if it’s active, simply dissolve it along with a teaspoon of sugar in warm water or warm milk and leave for 5 to 10 mins. If it starts to foam, then it’s active, if not, it’s useless.
- Also note that the softer your dough, the better and softer your doughnuts turn out to be (you don’t want your kids to be eating rock strong donuts do you 😨?).
