Plantain Banana Porridge Recipe

First thing to note is that depending on how experimental you are, it’s totally your choice if you want to eat this recipe with Banana and Plantain together or separately as individual recipes.

I only merged them together for this post because the later and the former (obviously) come from the same family of plants and virtually look and taste alike (don’t tell anyone I told you this but even I myself still finds it hard to differentiate a Banana tree from a Plantain tree…even though my Mum has had a farm for years).

Anyway, one weird fact about this recipe is that most Nigerians aren’t used to it. The typical response for us is to eat Beans Porridge with Plantain but not Banana or Plantain Porridge alone as it could seem quite boring.

Well there’s a solution to that. We’ll show you a few ways you can spice up the life of this meal using Periwinkles, Groundnut oil, Scent leaf and a host of other foods.

Ingredients you’ll need

  • 1 bunch of Bananas or Plantain…or  both! (you can add 2 fingers of unripe Plantain if you’re all about that kind of taste)
  • 2 medium sized Onions
  • Pepper (as much as you can handle…I can handle PLENTY)
  • 1 cup of Palm Oil (some of you may prefer Groundnut oil. If that’s more your speed, by all means)
  • Salt and Seasoning cube
  • 6 cups of water
  • Crayfish
  • Dried smoked fish
  • Diced Vegetables (Pumpkin leaves)
  • Periwinkles (Optional)
  • Scent leaf (Optional)

Directions for how to prepare Plantain & Banana Porridge recipe

Step 1: Peel the plantain or Bananas and dice them into small cubes

Step 2; Put in a pot and add the 6 cups of water and boil with the crayfish and seasoning cubes

Step 3: 5 mins into the cooking time, add the chopped pepper, onions and the dried smoked fish (after you have washed and deboned it obviously). If you’re also into periwinkles, it’s at this stage you should add those.

Step 4: Since this is Plantain/Banana and not Yam or Potatoes, it therefore means that it’s going to get soft pretty fast. If you’re not aiming for it to come out mashed, then you need to be on your guard. Just before it is ready, pour your palm oil (or groundnut oil).

Step 5: Lastly, add your vegetables or spinach or scent leaf, whichever one tickles your tummy. Stir well and turn off the heat.

And that’s how to make Plantain & Banana Porridge recipe! Very simple, short and straight to the point.

If you were cooking it for your baby, you might want to let it over done and be mashed so it’s easy for babies to eat. To accomplish this, instead of 6 cups of water, you can put 8 cups.

Ingredients

  • 1 Bunch of Bananas or Plantain...or  both! (you can add 2 fingers of unripe Plantain if you're all about that kind of taste)
