Let’s face it – when eating sweet potatoes, most Nigerians would typically boil or fry theirs (guilty as charged). Rarely does the thought of porridge potatoes cross our minds. I mean – it’s not yam after all. But the fact that you’re on this very page searching for mashed sweet potatoes porridge shows that the idea is slowly creeping up on many.

Without further ado, let’s get right to the ingredients you need to make this happen:

Ingredients

  1. 3-4 large sweet potato, peeled and cut into cubes
  2. 2 tablespoons butter
  3. 2 cups milk
  4. 1/4 cup honey
  5. 1 teaspoon ground cinnamon
  6. 1/4 teaspoon ground nutmeg
  7. 1/4 teaspoon salt
  8. 1/4 cup chopped toasted pecans (optional)
  9. Red oil/Palm oil (optional)

Utensils needed

  • A Teaspoon
  • A large pot
  • A large saucepan
  • A wooden spoon
  • A strainer
  • A cutting board
  • A knife
  • A large bowl
  • Measuring cups
  • A grater or food processor
  • A spoon or ladle for serving

How to make Sweet Potato porridge recipe step by step

Step #1: Start by peeling and dicing the sweet potatoes into small cubes. Make sure the cubes are small enough so that they will cook evenly and quickly.

Step #2: Place the sweet potatoes in a medium–sized saucepan and pour in 2 cups of water. 

Step #3: Place the pan on the stove over high heat and bring the water to a boil, then reduce to a simmer. 

Step #4: Cook until the sweet potatoes are soft, which should take about 15 minutes. Check the sweet potatoes with a fork to make sure they are soft. If they are still firm, continue to simmer for a few more minutes.

Step #5: Use a potato masher or immersion blender to mash the sweet potatoes, adding a little extra water if necessary to make a smooth, creamy texture.

Step #6: Add 1/4 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1/4 teaspoon of salt and other ingredients and stir to combine. If you’re into it, you can also add about 4 table spoons of palm oil.

Step #7: To obtain a thicker porridge, reduce the heat to low and simmer for an additional 5 minutes.

Step #8: Serve the porridge warm, topped with your favorite toppings such as nuts, seeds, dried fruit, or honey. Enjoy!

A few things to note when making sweet potato porridge

To ensure a creamy, smooth porridge, use a creamy sweet potato variety such as the Jewel or Hannah sweet potato. If you‘re using canned sweet potatoes, make sure to drain and rinse them before cooking to remove any excess starch.

To achieve a thinner porridge, use more liquid and less sweet potato. For a thicker porridge, use less liquid and more sweet potato. If you‘re using milk (not all of you would dare this), make sure it‘s room temperature so it doesn‘t curdle when it‘s added to the porridge. Lastly, to sweeten the porridge, add a natural sweetener such as maple syrup or honey.
