While it’s more habitual for Nigerians and Africans to typically destroy bowls of Nkwobi outdoors on a Friday or Saturday night at their favorite chill spot, some of you might actually prefer to prepare this Nigerian meat recipe in the comfort of your homes, maybe even for your hubby, Fiancé or Boyfriend (Manfriend if you will ?).

About the Nkwobi recipe (Spicy Cow foot)
Most people I know confuse the meaning of Nkwobi with Isi Ewu. But thy aren’t nearly the same thing. Yes, both are Igbo food recipes but they mean absolutely different things (from different animals in fact).
While the former means Cow foot, the later means Goat head. So for all of you searching Google for things like “How to prepare Nkwobi Isi Ewu with Goat head“, please stop. Now you know better.
Personally I’m not a fan of this food. I once mistook it for Asun at one of my many evening hangouts and I got a bitter experience – literally speaking.
But for the lot of you who love it, this post is dedicated to you.

How much is a plate of Nkwobi
The price of a plate or bowl of Nkwobi Cow foot varies from seller to seller. If you go to a decent looking establishment like many of the chill spots/bars around, you can typically buy a plate for just N500 Nigerian naira.
However, if you go to more standard places like Smokeybones in Lagos Island, a plate costs as much as N2,250 naira. In fact, I hear some places sell it for N5,500 naira! (Don’t shout. It’s not by force to buy).
Now that we’ve gotten all that out of the way, it’s time to show you exact steps in the recipe and Ingredients for how to make Nkwobi.

Ingredients for Nkwobi recipe
- 2,500 grams of Cow feet
- Salt and Seasoning cubes
- 1/2 cup of Palm oil
- 1 cup of Ugba (fermented African OIlbean seeds – Optional)
- 3 Table spoons of ground crayfish
- 1 large chopped Onion
- Sliced Utazi leaves
- 1 teaspoon of Garlic powder
- 1 teaspoon of ground Ginger
- 2 teaspoons of ground Cameroon pepper

Steps on how to prepare Nkwobi recipe
Step 1: Cow meat is typically large so cut it into small pieces first and remove all the bigger bones. You can leave the smaller bones (people enjoy sucking these). Put into a pot and fill with water until it covers the meat. Add your salt, Seasoning cubes and chopped onions to season the meat. Stir and leave until the Cow feet has been cooked tender soft (this could take a while so using a Pressure Cooker is advised).
Step 2: Boil the Ugba separately for just 3 minutes in order to remove any bacteria that it might poses. Also dissolve the potash in a cup of water before filtering it into a separate pot.
Step 3: Pour the Palm oil into this pot and stair very well until it is thick and the color becomes yellow (if you don’t get a yellow color, your Nkwobi is going to be red in color).
Step 4: Now add your crayfish, Ugba, Cameroon pepper, seasoning cube and salt into that same pot and mix well.
Step 5: Add your soft tender meat into this pot and stir into the palm oil mixture. Serve in a wooden bowl with toppings of round-cut onions and sliced Utazi leaves.

Equipment
- Pressure Cooker to cook the meat faster
- 3 Pots to cook the meat and the other ingredients
- Wooden bowl to serve the dish
Ingredients
- 2500 grams Cow feet
- Salt (As required)
- Seasoning cubes (As required)
- 1/2 Cup of Palm oil
- 1 Cup of Ugba (Optional)
- 3 Table spoons of ground crayfish
- 1 Large chopped Onion
- Sliced Utazi leaves
- 1 Teaspoon of Garlic powder
- 1 Teaspoon of ground Ginger
- Ground Cameroon pepper (As much as you can take)
Instructions

- Add your salt, Seasoning cubes and chopped onions to season the meat. Leave until meat is cooked tender.

- Cow feet can take up to an hour before it gets tender soft so it's typically advisable to cook it using a Pressure Cooker.
