So, i first got interested in learning how to make Vanilla Yogurt from the moment i laid eyes on Pinkberry Yogurts when they newly came into the Nigerian market. From mere looking at it, it was somewhat hard for me to tell the difference between a bowl of Yogurt and a bowl of Ice cream.

Directions for how to make Vanilla Yogurt Recipe (with plain or Greek Yogurt)
Before we dive into the step by step directions proper, its important you know that with this recipe, you can choose to make your own Yogurt thick or light. It all depends on how you like it (i prefer thick but that’s just me). For those of you who like yours thich, the Greek Yogurt tends to be typically thicker than the natural one.
Step 1: Pour your powdered milk of choice into a saucepan and add a cup of lukewarm water. Stir well so dissolve the milk. Once the milk is properly dissolved, add more all the remaining water. Don’t yet add sugar and flavor at this point.
Step 2: Next, place the saucepan with the dissolved milk solution on medium heat and stir continuously so it doesn’t burn as you wait for it to start boiling (when it is about to start boiling, you’ll notice some bubbles start to surface on the milk. Stir quickly and bring down from the fire).
Step 3: Let the hot milk cool down till it is of Luke warm temperature (about 44 degrees Centigrade) (as it’s cooling, there will appear a thin layer of film that will form on the surface of the milk. Peel it off. You don’t want this.
Step 4: Mix the Greek or plain Yogurt with the Milk solution. If you want, you can dilute the Yogurt using warm milk if it’s too thick before mixing it with the Milk. Mix both thoroughly (secret hack: you could even use an egg beater machine to make it mix faster….don’t tell anyone i told you!).
Step 5: Gently and carefully pour the mixture into any container of your choice that can be sealed pretty air tight with its cover. You can also add a strip of plastic wrap or foil paper over it just to be double sure that it is sealed air tight. All this is to properly preserve the internal temperature of the Vanilla Yogurt.
Step 6: Place in a warm Oven. If you can’t get access to one, boil water and pour into several water bottles, place beneath a food cooler, place the bowl of your mixture on them and place more on top before closing the cooler tightly shut.
Step 7: Leave like this between 8 to 12 hrs so the mixture can set properly.
Step 8: After 8 hrs, you can open the cooler and check the mixture. All things being equal, you should see a natural thick Yogurt mixture. Now add your Vanilla flavoring and sugar to the quantity you desire.
And that’s how to make homemade Vanilla Yogurt recipe using Greek or Plain Yogurt.
