About our peppered Ponmo (Kpomo) recipe
For those of you who are not too familiar with the word “Ponmo”, it’s basically just Cow skin.
Peppered Ponmo recipe is a Nigerian delicacy prepared by frying onions and pepper together with cooked, often rolled Cow skin.
As I’m writing this post I can easily count at least 3 joins where peppered Kpomo is being sold around just my locality.
I guess the fact that it’s so easy to prepare and costs next to nothing to acquire the Cow skin is what has made its sale run rampant in Nigeria of recent.
To tell you the truth, I’m a big fan of anything pepper. From Suya Chicken to Asun Goat meat to peppered stick meat, Nkwobi or even peppered Snail, I’m your guy 😋.
Almost every evening I go out into town, I make sure to come back with at least 4 pieces of peppered Ponmo with sauce.
A few of you have been asking some questions concerning making this dish so let me simply put them to rest before we get into the recipe proper.
What is Ponmo called in English?
Kpomo is simply Cow skin in English. Some other languages in Nigeria also call it Kanda (sounds a bit Hausa though).
What is the health benefit of Pomo?
Absolutely none!
I wrestled with this sad truth for a while before I accepted it because as I said earlier, I’m a big fan of peppered Ponmo.
So if you’re the kind who regularly substitutes Beef, Chicken or Fish in favor of Kpomo, what you’re doing is depriving yourself of all the protein and other necessary nutrients your body needs to get through eating of meat.
You might as well be a Vegetarian.
How to cook kpomo soft
First and foremost, when you’re in the meat market, make sure not to buy Ponmo that is thick and broad.
Always opt for the thin and rolled variant. That way, you wouldn’t need to cook and cook it before it becomes soft (personally, I hate thick Kpomo because it reminds me of Pig meat 😒)

But for the record, preparing Nigerian Ponmo sauce is a very simple process that mostly involves fresh pepper, oil, onions and seasoning.

Ingredients you’ll need
- Cow skin (200g)
- 3 Large Onions
- 5 balls of pepper
- Vegetable oil
- Seasoning cubes
- Salt
Directions for how to make Nigerian peppered kpomo (Ponmo)
Funny enough, this is one of the simplest recipes you will find here. It’s one of those “4 ingredient recipes” you can knock off easily anytime, and all it takes is 5 steps:
Step 1: Scrape the dirt off the back of the Ponmo, wash it and chop it into smaller pieces.
Step 2: Pour water into a pot (just about 50cl) and add salt, seasoning cubes, chopped pepper and sliced Onions. Boil till Ponmo is tender to your liking.
Step 3: Sieve the water away and keep the Kpomo aside.
Step 4: Take a frying pan and pour some Vegetable oil inside. Once hot, pour sliced Onions and chopped pepper and stir.
Step 5: Add the Ponmo and stir all together for just 2 minutes. You can sprinkle some salt or Seasoning powder in the frying mixture for extra taste.
Your peppered Ponmo is ready to be served with some chilled Chapman or Zobo drink.

- Ponmo has a history of being very dirty because it's the outer skin of the Animal. Hence, never buy it and simply wash it. You need to scrape off the outer & inner layer of the Kpomo with a Knife. You'll thank me when you see all the black dirt you could have eaten.
